Fruit and Vegetable Lab
Applesauce
3 apples, medium size
¾ cup water
3 tablespoons sugar
1.
Wash, peel, core and cut each apple into 12-16
sections.
2.
Add apple slices to boiling water; cover
saucepan; cook at simmering temperature until slices are tender and soft,
approximately 15-20 minutes.
3.
Stir cooked apple slices with a fork until
slices are broken up. Add sugar
and stir until sugar is dissolved.
Coddled Apples
2 apples, medium size
2/3 cup sugar
1 ½ cups water

Add sugar to water in saucepan. Stir until sugar is dissolved. Bring to a boil.

Wash, peel, core and cut apples into ¼” rings.
3.
Add apples to hot syrup and cover saucepan. Reduce heat to cook apples slowly for
about 20 minutes or until slices are translucent and clear when lifted from the
water.
Cream of Broccoli Soup
1 ½ cups chicken broth
½ cup chopped onion
2 cups cut broccoli
2 tablespoon butter
2 tablespoons flour
½ teaspoon salt
1 cup milk
½ cup grated cheese, if desired

In a saucepan, combine chicken broth, chopped
onion, and broccoli.
2.
Bring mixture to boil.
3.
Reduce heat; cover and simmer 10 minutes.
4.
In another saucepan, melt the butter
5.
Blend in flour and salt
6.
Add the milk and cook, stirring constantly until
the mixture is thickened and bubbly.
7.
Stir in the vegetable mixture
8.
Cook and stir until soup is heated through
9.
Add cheese, if desired.
