1/2 lb. fettuccine
2 or more chicken breasts
2 tablespoons Cajun seasoning (Tony's/Creole)
3 tablespoons butter
1 green bell pepper, chopped
1/2 red bell pepper, chopped
4 mushrooms, minced
1 green onion, minced
1 1/2 cup heavy whipping cream
1/4 teaspoon basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
2 tablespoons Parmesan
Cook Pasta, drain.
While the water is heating. Cut the chicken into half inc pieces. Place in bowl with Cajun seasoning, toss to coat. Salute chicken in butter over medium heat for 5-7 min or until cooked. Add bell peppers, mushrooms, and green onions. Salute for another 3 min. Reduce heat and stir in cream. Add spices. Toss with fettuccine to serve. Makes 8 servings.
