Garlic Chicken Farfalle

No-Bake Cheesecake

Garlic Chicken Farfalle

16 oz. farfalle (bowtie) pasta
1 cu heavy whipping cream
3-4 chicken breasts (boneless, skinless)
2-3 cloves garlic, crushed
Diced sweet roasted red peppers or dried tomatoes
1 Tbsp. pepper*
1/2 cup butter
1 lb. bacon, crumbled**
1/2 cup shredded Parmesan cheese
1 (12 oz.) Lawry's mesquite marinade with lime juice or herb and lime

*Seems like a lot of pepper, but it has a wonderful flavor when everything mixes together.  If you're apprehensive, do less pepper.  You can always add more.
Crock pot chicken and bottle of marinade on low for 6 hours.  Pull marinated chicken out of the juices, allow to cool a little bit and shred.  Set this aside.  About a half-hour before serving, boil the pasta.  In a small saucepan melt butter; add garlic, whipping cream, pepper, parmesan cheese and crumbled bacon.  Whisk together on low heat for 3-4 minutes.  In a large bowl, pour over cooked, drained pasta; add chicken and stir through.  Sprinkle a little bit more shredded parmesan cheese on top.

No-Bake Cheesecake

8 oz. cream cheese
1/4 cup sugar
1 tsp. lemon juice
8 oz. whipped topping
1 prepared graham cracker crust

In a large bowl, whip cream cheese, lemon juice and sugar until fluffy.  Add whipped topping and whip until smooth.  Spoon mixture into pie crust and chill until firm.

Pineapple Burgers
BBQ hamburgers on grill
BBQ pineapple until ready


Vanilla Pudding

1/3 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt 
2 cups milk
2 egg yolks, slightly beaten
1 tablespoons butter
2 teaspoons vanilla

1. Mix sugar, cornstarch and salt in 2-quart saucepan.
2. Gradually stir in milk
3. Cook over medium heat, stirring constantly, until mixture thickens and boils.  Boil and stir one minute; remove from heat.
4. Gradually stir at least half of the hot mixture into egg yolks.
5. Pour mixture back into saucepan.  Boil and stir one minute, remove from heat.
6. Stir in butter and vanilla

7. Pour into dessert dishes.  Cover and refrigerate.

Breaded Chicken with Marinara Sauce

Lime Sorbet Crumble

Breaded Chicken

4 chicken breasts
1 cup Italian bread crumbs
2 eggs
Season according to taste

Thaw the chicken.  Put eggs in flat bottomed container and gently beat.  Place the chicken breasts in the egg mixture then dip into the bread crumbs.  Place the breasts on a can covered in aluminum foil, cove the top with aluminum foil, place in oven at 350 degrees for half an hour.

Lime Sorbet Crumble

4 cups lime sorbet or sherbet
1 small container Cool Whip
1 1/2 cups graham cracker crumbs
1/2 cup butter
1 1/2 Tbsp. sugar
1 lime

Mix the graham cracker crumbs with the butter and sugar.  Place into an 8x8 inch pan or in individual cups.  Set in refrigerator.  In a separate bowl, mix the lime sorbet and most the the container of Cool Whip.  Set aside the extra Cool Whip.  Take the pan (or cups) with the graham crackers out of the fridge and using a rubber spatula, spread the ice cream mixture over the top.  Put in freezer for 20 minutes.  Prolonged freezing will make the graham crust too firm.  When ready to serve, put extra whipped topping on top and use the lime for preferred garnish.

Spaghetti
Strawberry Pretzel Salad

Bottled salsa recipe
1 1/2 5 gallon bucket of tomatoes (blanched, peeled, and cut up)
4-5 bell peppers (take out seeds and chop in food processor)
7 onions (peeled and chop in food processor)
8-10 jalapeno or anaheim peppers (carefully take out seeds and chop in food processor)
3/4 c. sugar
3/4 c salt
2 1/4 t. cumin 
Combine and let simmer for 5 hours.

Spaghetti
Noodles
8 ounces of angel hair pasta noodles

Boil water than put in noodles

Sauce
8 oz Hamburger                            1 can Tomato sauce
2/3 c. Salsa                                    Oregano
Garlic Salt                                    Onion Salt
Onion flakes

Brown hamburger, put in one can of tomato sauce fill up the can with water than pour it in the pan. Mix in salsa and let it simmer for five minutes.  Sprinkle in oregano, garlic salt, onion salt, and onion flakes until you enjoy the taste. Serve on pasta noodles and if desired add cheese

Strawberry Pretzel Salad
Crust
¼ c and 2 T. margarine            3/4 c crushed Pretzels
1 1/2 T. Brown sugar
Combine above ingredients and mix well.  Pat into lightly buttered 9X13 pan.  Bake at 350 for 10 min.
  
Middle
Mix: 4 oz cream cheese        1/2 c. sugar
4 oz. whipped topping.
Spread mixture onto cooled pretzel crust.  Make sure there or no holes so the jello will not seep into pretzels

Topping
8 oz pkg strawberry or raspberry jello        1 1/2 c. chilled berries (strawberry or raspberry) or slightly thawed
1 c. boiling water            1/2 c. cold water
Dissolve jello in boiling water.  Add cold water and berries.  Cool till mixture begins to set.
When jello begins to set pour over cream cheese mix.
Refrigerate overnight or until set

Cheesy Croissants
1 c. cheese                  parmesan
½ t Garlic salt                  1 croissant package of 8

Unroll the croissants and sprinkle cheese, parmesan, and garlic salt on. Then roll up croissants and sprinkle a little more parmesan and garlic salt on top

Pumpkin Chocolate Chip Muffins

4 eggs
2 cups sugar
1 can (32 oz) pumpkin
1/2 cup vegetable oil
3 cups flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 cups chocolate chips

Beat eggs, sugar, pumpkin and oil together.  In separate bowl, mix flour, baking powder, baking soda, cinnamon and salt together.  Add dry ingredients to wet ingredients and mix gently to combine.  Fold in chocolate chips.  Pour into muffin tin or into greased 9x13 pan and bake at 350 for about 20 minutes for muffins or about 30 minutes for cake pan.

Chicken Roll-Ups

1 chicken breast 
Cut into smaller pieces and boil until tender.
Drain water and shred meat.

2 oz. onion and chive cream cheese
2 oz. regular cream cheese
2 Tbsp. condensed cream of chicken soup
Mix together in a bowl.
Stir in the chicken.

1 pkgs. refrigerated crescent rolls.
Place a spoonful of mixture on a piece of crescent roll dough and roll up. 
2 Tbsp. melted butter
2 Tbsp. bread crumbs
Roll each piece in melted butter, then bread crumbs.

Bake at 350 for 15-20 minutes.

Easy Homemade Ice Cream

2 cups milk
3 cups cream
1 cup sugar
1 1/2 Tbsp. vanilla
dash salt


Pour milk and cream into gallon freezer.  Gradually add sugar, stirring constantly until sugar is dissolved.  Stir into can and freeze as directed.
