Scratch Cake


1 cup sugar
½ cup shortening
2 eggs
2 teaspoons baking powder
¼ teaspoon salt
2 cups milk
2 cups flour
Cinnamon sugar (sprinkle to liking)
Instructions
1.      Preheat oven to 350 degrees. 
2.      First mix together sugar, shortening and eggs until thoroughly mixed.
3.      Add baking powder, salt, and flour to mixture.
4.      Add milk. Beat on medium for two minutes.
5.      Put cake mix in a greased baking pan. Sprinkle cinnamon and sugar to your liking on top.
6.      Bake for 40 minutes.

Enchilada Soup


2 Cans Cream of Chicken
2 Cans Black Beans
2 Cups chicken Broth
2 cloves Garlic
2 tsp Lemon Juice
2 Chicken Breasts
2 cans tomatoes
½ Cup Salsa

Combine all ingredients. Put in crockpot on high 2-3 hours. Serve with tortilla chips!

Strawberry Chocolate Shish Kabobs

Strawberry Chocolate Shish Kabobs

Ingredients: 
Strawberries
     30 oz (3 bags) Dove Chocolates
     48 strawberries
Brownies
     8 oz unsweetened chocolate
     2 cups butter, softened
     4 cups sugar
     8 large eggs
     2 Tbsp vanilla extract
     2.5 cups all-purpose flour
     2 cups milk chocolate chips
     2 cups semi-sweet chocolate chunks

Directions: 
For Strawberries:
1. Rinse strawberries and dry completely.
2. Melt Dove chocolates in a double boiler. When smooth, remove from heat.
3. Line a sheet pan with parchment or waxed paper.  Holding strawberry by the stem, dip the fruit into chocolate, then lift, letting excess chocolate fall back into bowl.  Set aside 30 minutes, or until chocolate sets.

For Brownies:
1. Melt 8 ounces chocolate in a saucepan over low heat.  Once melted, set aside for 15 to 30 minutes, allowing it to cool.  Chocolate should not be warm!
2.  Using your stand mixer, cream butter and sugar until fluffy.  Beat in the eggs,two at a time.  
3. With mixer on low, drizzle in the cooled chocolate. Mix until just combines.  Next, add in vanilla exptract and mis until combined.
4. Add flour and mix until just combined.  Scrape sides and bottom of bowl and mis for five most seconds.
5. Add chocolate chips and chocolate chunks and mix for just a few seconds on low, until they are incorporated.
6. Generously grease and flour mini-muffin pan.  Scoop generous teaspoons of batter into each hole. (We don't want the brownies to have muffin tops; try to get them to stay under the top of the tin.)  
7. Bake for 10 to 14 minutes, or until set.  Remove pans and invert on a cooling rack.  Allow brownies bites to cool completely.
8. Skewer brownies and strawberries together and serve.

The Best Chocolate Chip Cookies Ever


Ingredients:
1 tsp Baking Powder
1 cup Brown Sugar
1 tsp Baking Soda
1 cup White Sugar
½ tsp Salt
1 cup Salted Butte
r2 ½ cups Oats (used to make oatmeal)
2 Eggs
1 tsp Vanilla
2 cups Flour
1 – 12oz package of Semi-Sweet Chocolate Chips

*Makes about 4 dozen cookies depending on the size of your cookie


Directions: Preheat oven to 400°F .Cream together butter and sugars. Beat in eggs. Add dry ingredients. Put oats in blender (or food processor) and pulse till its fine-like flour. Mix in oats and vanilla. Then add chocolate chips. Roll cookies into balls (I like mine to be a little bit smaller than a golf ball but you can make them as big or as small as you want). Bake them for about 6-10 minutes depending on your oven. I usually do about 8.

Banana Yeast Bread


Ingredients
3/4 cup milk
1/2 cup butter
1/2 cup sugar
5-1/4 to 6 cups all-purpose flour
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3 eggs
3 medium ripe bananas, mashed
1 teaspoon water
Directions
1. In a large saucepan, cook and stir the milk, butter and sugar over medium heat until butter is melted; cool to 120°-130°. In a large bowl, combine 2 cups of flour, yeast, salt, 2 eggs, bananas and milk mixture; beat on low speed until combined. Beat on medium for 3 minutes. Stir in enough remaining flour to form a firm dough.
2. Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes.
3. Divide dough in half; shape each into a round loaf. Place on a greased baking sheet; cut slits in tops. Cover and let rise until doubled, about 45 minutes.
4. Beat remaining egg with water; brush over the loaves. Bake at 375° for 30-35 minutes or until golden brown. Yield: 2 loaves (14 slices each).

Clam Chowder

Cherokie Limb --Cher’s (Clam) Chowder Recipe        Serves 24                                                                                                    
Ingredients:

2 c onions
2 c celery
1 c butter
40 oz canned clams
12-16 c cubed red potatoes 
12 c milk
12 Tbsp flour
1 tsp black pepper
1 tsp balsamic vinegar
2 pounds pork sausage
1 tsp + chives
1 tsp celery salt
1 tsp onion powder 
1 tsp garlic


Instructions:
1.    Soak potatoes (cubed) in 16 cups of cold water for 2 hours (or boil until pre­soft)
2.    drain and add to soup as indicated 
3.    in saucepan, saute onion, celery and garlic in margarine until tender. Add celery salt and onion powder. Cook until tender.
4.    Add clams with juice, cooked sausage, potatoes, and 9 c milk
5.    Simmer for 5-10 minutes
6.    Mix rest of milk with flour; stir into chowder
7.    Add black pepper, balsamic vinegar, chives
8.    Simmer 15 minutes & stir often

9.    Sprinkle serving with paprika and chives and/or topping herb/seasoning of choice

Banana Drop Cookies


Bake 10-12 Min.
Oven 375 Degrees

Ingredients:
½ cup butter
1 cup sugar
2 eggs
½ tsp vanilla
2 cups flour
1 ½ tsp baking powder
½ tsp cinnamon
1/3 tsp baking soda
¼ tsp salt
1/3 tsp ground cloves
1 cup mashed banana (2 medium)
½ to 1 cup chocolate chips

Instructions: 
Grease cookie sheet. 
In a mixer bowl beat ½ cup butter for 30 seconds. 
Add 1 cup sugar beat tifluffy. 
Add 2 eggs and ½ tsp vanilla; beat well. 
Alternately add 2 cups flour, 
1 ½ tsp baking powder,
½ tsp cinnamon, 
¼ tsp baking soda, 
¼ tsp salt, 
¼ tsp ground cloves
 and 1 cup mashed banana (2 medium).
Beat after each addition. 
Stir in ½ - 1 cup chocolate chips.
