Shrimp Cocktail
Rice Krispy Treats

Shrimp Cocktail
1 pound large shrimp cooked
Salt
3 cucumbers peeled and diced
3 tomatoes diced
1/4 cup chopped cilantro
1 avocado, cut into chunks
V8 vegetable juice 
1 cup chopped onion

Bring a medium pot salted water to a boil (a tbsp salt for 2 quarts of water), add the shrimp, and cook for 2-3 minutes, until just cooked through.   Put the shrimp in a bowl with the chopped onions, cucumber, tomatoes, cilantro, and V8 juice. Gently stir to combine, and chill.

To serve, add salt to taste and gently mix in the chopped avocados.

Rice Krispy treats
½ cup butter or margarine
10 ounces regular marshmallows or 4 c. mini marshmallows
5 cups rice krispies cereal

1.  Melt 1/4 cup margarine or butter in large saucepan over low heat.
2.  Add marshmallow and stir until completely melted.  Stirring constantly, cook 3 minutes longer over low heat.
3.  Remove from heat.
4.  Add cereal and stir until well coated.  Cool slightly.
5.  With the remaining 1/4 cup butter, butter cake pan.  Butter your fingers and press warm mixture into large, buttered pan.
6.  Cut into squares before serving.
