Summer Squash Breads





Brown Sugar Zucchini Bread
1 cup sugar
1 cup brown sugar
1 cup oil
3 eggs
3 tsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. soda
¼ tsp. baking powder
2 cups grated zucchini


Chocolate Zucchini Bread
2 cups sugar
1 cup oil
3 eggs
3 tsp. vanilla
2 ½ cups flour
½ cup baking cocoa
1 tsp. salt
1 tsp. soda
¼ tsp. baking powder
2 cups grated zucchini
½ package chocolate chips


Lemon Summer Squash Bread
2 ¼ cup sugar
1 cup melted butter
3 eggs
6 Tbsp. lemon juice
3 cups flour
1 tsp. salt
1 tsp. soda
1 tsp. baking powder
2 cups grated yellow summer squash

For glaze:  ½ cup powdered sugar
                    3 tsp. lemon juice









Directions:

In a large bowl, mix together the sugar, fat, eggs and flavor extract.

Combine the dry ingredients; blend in.

Stir in summer squash and chocolate chips if desired.

Transfer into two 8x4 loaf pans or 5 mini loaf pans coated with cooking spray.

Bake at 350 for about 50 minutes or until a toothpick inserted near the center comes out clean. 

Cool for 10 minutes before removing from pans to wire racks to cool completely.
