Mozzarella Chicken
Brown Rice
Cauliflower and Broccoli
Lava Cakes with Ice Cream

Mozzarella Chicken
4 chicken breasts
2 eggs
2 cups corn chex
2 Tbsp. butter or margarine
1 cup shredded mozzarella cheese
1 can chicken broth

Dip chicken breasts in egg, then in corn chex crumbs.  Brown in butter.  Place in a baking dish and spread cheese on top.  Add chicken broth.  Bake at 350 degrees for 30 to 45 minutes.

Lava Cake
4 squares bakers select semi-sweet chocolate
1/2 cup butter or margarine
2 eggs
2 egg yolks
1 cup powdered sugar

Heat oven to 425.  Microwave chocolate and butter in microwaveable bowl on high for 2 minutes.  Whisk until melted.  Separate 2 eggs.  Stir the 2 yolks, 2 whole eggs and 1 cup of powdered sugar into chocolate mixture.
Grease 4 custard cups with butter and place on baking sheet.
Bake 13 minutes or until cakes are firm around edges but still soft in centers.  Let stand 1 minute.  Run knife around edges to loosen; invert onto plates.  Top with 2 Tbsp. powdered sugar.
