Chicken Roll-ups

2 cups shredded chicken
1 pkg. cream cheese
1 pkg. crescent rolls
2 Tbls. melted butter
1 cup bread crumbs

In a bowl combine chicken and cream cheese. Separate crescent rolls and flatten. Put 1 ½ Tbls. on each roll. Roll up and spread melted butter over with a pastry brush. Completely cover with breadcrumbs. Place on a pan and bake in the oven at 325 degrees for 15-20 minutes, or until golden brown. Makes 8.


Craisin Salad

1 10 oz. pkg. of mixed dark greens
4-5 oz. swiss cheese
1/3 c crasins

Toss together in a medium size bowl. Feeds 6.

Dressing

1/3 c sugar
1 ½ Tbls. poppy seeds
2 dashes onion powder
¼ tsp. Worcestershire sauce
¼ tsp. mustard powder
¼ c vinegar
1/3-1/2 cup olive oil

Mix all together in a small bowl. Stir with a whisk. Pour over salad or place in a dressing dish.



Warm Apple Cake

½ cup sugar
¼ cup butter
1 egg
2 cups unpeeled, shredded apples (about 4 apples)
1 cup flour
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. salt

Combine first 4 ingredients in a medium size bowl. Combine dry ingredients in a separate bowl. Add dry ingredients to the apple mixture. Grease an 8x8 pan. Bake at 350 degrees for 30-40 minutes or until cake bounces back.

Sauce

½ cup butter
1 tbls. flour
1 cup sugar
1 cup canned milk
1 ½ tsp. vanilla

In a small saucepan, melt butter over medium heat. Slowly add flour while stirring with a whisk. Add sugar, canned milk, and vanilla. Keep on low until ready to eat. Pour over warm cake.
