Enchiladas
Mexican Rice
Cheesy Refried Beans
Chocolate Covered Strawberries

Cheesy Beef Enchiladas 

1 pound ground beef 
1/2 onion, chopped 
1 small can green chilies 
16 ounce can red enchilada sauce 
10 corn tortilla shells 
1 Tbsp. oil 
3 cups shredded cheese

Preheat oven to 350. Combine ground beef, onion, and green chilies in large skillet. Cook until the meat is browned. Combine half of the can of enchilada sauce and 2 cups of cheese with the hamburger mixture. Stir until cheese is melted. Heat oil in a small skillet. Slightly cook the tortillas in the oil (Do not let the tortillas get crispy). Place a spoonful of the hamburger mixture down the center of a tortilla, roll the tortilla up, and place in a baking dish. Repeat with remaining tortillas and mixture. Sprinkle remaining cheese on top. Cook for 30 minutes or until cheese is melted. 


Easy Mexican Rice 
(Life in the Lofthouse) 

1 cup uncooked long-grain rice
2 cups chicken broth
1 Tablespoon butter
1/2 cup salsa
1 teaspoon garlic salt
1/2 teaspoon ground cumin

Combine all ingredients into a medium, non-stick skillet. Bring to a boil, then cover and reduce heat to low. Simmer for 25 minutes. Remove from heat and let rice stand with lid on for 10 minutes. Remove lid and fluff rice with a fork. Serve!


Cheesy Refried Bean Bake 
(Six Sisters Stuff) 

1 Tablespoon butter
1/4 cup chopped onion
1 Tablespoon minced garlic
1 (16 ounce) can refried beans
1 (4 ounce) package cream cheese
1 cup shredded cheddar cheese
2 green onions, chopped

Preheat oven to 350 degrees F.  Melt butter in a saucepan over medium heat and saute onion and garlic for 2-3 minutes, or until onions are soft.  Add refried beans to the sauce pan and stir until heated through.  Remove from heat and fold in cream cheese.  Spread mixture into a pie dish and top with cheese.  Bake for 15-20 minutes, or until cheese is completely melted.  Garnish with green onion.


Chocolate Covered Strawberries 

1 container strawberries
12 ounce bag milk chocolate 
2 cups white chocolate 

Wash and dry strawberries. Melt milk chocolate in the microwave. Approximately 2 minutes, stirring occasionally. Dip strawberries in chocolate and place on wax paper. Melt white chocolate and drizzle over strawberries.
