Hokin Lee


Balsamic Vinegar Dressing:

3 tbsp  Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
4 tbsp  Sugar
Salt, Pepper
¼ tsp. lemon zest
Combine and serve with salad greens.

Pan-Sear Fish:

4   Tilapia Fillet
Salt, White Pepper
Olive oil

Herbs Roasted Potato:

4        Red Skin Potato, cubed
1 tbsp    Parsley Flakes
2 tsp    Oregano Leaves
1 tsp Basil Leaves
2 Tbsp.  Unsweetened Butter  
2 Tbsp Olive oil
Toss together.  Roast in 400 degree oven for 40 min.

Cinnamon Apple Bread Pudding:

1 tsp  Cinnamon
2  Eggs
3/4 cup Whole Milk
1/3 cup  Sugar
2    Apples, chopped

Combine apples and cinnamon; cook in frying pan for 2-3 min. Place half apples
in 4 custard dishes.   Stir together eggs, milk and sugar.  Soak bread cubes in this mixture.  Place on top of apples and top with remaining apples.  Bake at 350 for 30 min.
Serve with Vanilla ice cream and garnish with fresh mint if available.  If not, toast almonds to garnish.
