Sweet and Sour Popcorn Chicken

1 medium green pepper
1 small onion
1 tsp. oil
1 can pineapple chunks
3 tsp. vinegar
2 tsp. soy sauce
2 tsp. ketchup
1/3 cup brown sugar
2 tsp. cornstarch
1 pkg. 12 oz. popcorn chicken
enough pineapple juice to make 1 1/3 cup

Stir gry peppers and onion in oil until crispy and tender.  Drain pineapple, reserve juice and set aside or add to other juice to make 1 1/3 cup.  Stir in vinegar, soy sauce, and ketchup.

In a bowl combine brown sugar and cornstarch.  Stir into pineapple mixture until smooth.  Gradually add to skillet.  Bring to a boil.  Cook and stir until thick.  Add pineapple, reduce heat and let simmer.

Microwave chicken and add to sauce.

Fried Rice

4 cups instant rice
3 eggs
1 cube margarine or butter

Follow instructions on rice.  In a skillet melt butter.  As soon as the rice is done add to the skillet and mix around 3 eggs in the rice.  Add salt and pepper and make sure the rice is a yellowish color.

Oreo Dessert

1 pkg. Oreos
1 container Cool Whip
1 pkg. cream cheese
2 pkg. chocolate pudding
1/2 cup powdered sugar

Smash up the package of Oreos.  Melt butter in the microwave.  In a cake pan gently stir Oreos and butter then lay the mixture flat so it is like crust.  In a bowl combine cool whip, cream cheese, and powdered sugar.  Mix until smooth and then layer it in the cake pan,  Follow directions on the chocolate pudding package and then put that on top of the cream cheese mixture.  Put in fridge and let it set.
