Basque Salad
Pork Souvlaki
Rice Pilaf
French Bread
Ice Cream
Basque Salad
 1 head of lettuce
½ cup mayo
2 boiled egg whites.
¼ cup Apple Cider Vinegar
¼ or more teaspoon of garlic powder
2 garlic cloves
Salt and Pepper
Mix together until taste is right, serve right away

Souvlaki
8 wooden skewers 8 in long
2 lbs. boneless pork shoulder cut into 1 ½ in cubes
½ cup lemon juice
2 table spoons red wine vinegar
2 table spoons fresh oregano chopped
1 tale spoon fresh thyme chopped
2 table spoons garlic chopped
3 tablespoons olive oil
Salt and pepper
Soak skewers in water for at least 1 hour. In a bowl toss together pork, lemon juice, thyme, garlic, olive oil, salt and pepper, refrigerate overnight. On the skewers place 5 pieces of meat, lay on hot grill and grill slowly continuing to brush on marinade. Cook until meat is done.
