Fried Burritos
Southwestern Salad
Cranberry Cookies

Fried Burritos
6 Large tortillas
1 can refried beans
8 oz sour cream
Cheddar cheese

Vegetable oil for frying
Spread refried beans on tortillas.  Top with a spoonful of sour cream; spread.  Sprinkle with cheddar cheese.  Fold like a burrito.  Drop into heated oil with the folded side down so it doesn't come open.  Cook until golden brown on both sides.

Southwestern Salad:
3 cups shredded romaine 
1 small chopped roma tomato
½ can or corn 
½ can black beans 
3 green onions 
½ cup cheddar cheese 
½ cup mayonnaise 
¼ cup salsa 
2 teaspoons lime juice 
¼ teaspoon cumin 
¼ teaspoon chili powder 
¼ cup fresh minced cilantro 

For dressing, in a bowl, combine mayonnaise, salsa, lime juice, cumin and chili powder.  Stir in cilantro. 

Cranberry Cookies
1 (7oz.) box raspberry muffin mix
1/4 tsp. baking soda
2 ounces cream cheese, room temp.
2 ounces butter, room temp.
2 Tsp. brown sugar, firmly packed
1 egg

Mix the above ingredients together then add:

1/2 cup white chocolate chips
1/2 cup chopped macadamia nuts

Bake at 350 for 10-12 minutes.
