Chili Special with Rice
Oatmeal Raisin Cookies with Ice Cream

Chili Special
1 15 oz can pork & beans
1 15 oz can chili
1 15.25 oz can corn
1 Tb. chili powder
3 Tb. ketchup
1 Tb. mustard
¼ cup brown sugar
1 8-count bag of hot dogs

For Serving:
1 cup rice
1 cup of shredded cheddar cheese

In sauce pan mix together all the ingredients. Cook on medium heat for 10 minutes and stir occasionally. Bring to low until serving. In different sauce pan bring 2 cups of water to a boil, add rice. Cook on low for 45 minutes. Serve in bowl or plate, rice first, then chili, top off with cheese.


Oatmeal Raisin Cookies
½ cup butter
½ cup sugar
½ cup brown sugar
1 egg
1 tsp. vanilla
1 cup flour
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 ½ cups rolled oats
½ cup raisins

Heat oven to 375 degrees. Cream butter, sugars, egg and vanilla. Measure flour and combine with baking powder, baking soda and salt. Stir into creamed mixture. Add oats, nuts and raisins. Drop by rounded spoonfuls onto lightly greased baking sheet. Bake for 8-10 minutes.
