Chicken and Veggies
Long Grain and Wild Rice
Rolls
Mint Chocolate Chip Ice Cream

Chicken and Veggies
3                      Chicken Breasts
2                      Roma Tomato
1                      Green Bell Pepper
½                     Onion
4 stems          Cilantro
To taste         Season All
2 TBSP                         Vegetable Oil

Cut chicken breast into bite size pieces. Throw into a large skillet with oil.
Cut up vegetables and throw into skillet with chicken.
Season to taste with Season All.
Cook until the chicken is thoroughly cooked.


Homemade Rolls


1 cup plus 2 tablespoons   warm water
⅓ cup                                      vegetable oil
2 tablespoons                                  active dry yeast
¼ cup                                      sugar
½ teaspoon                           salt
1                                              egg
3½ cups                                  all-purpose flour

Preheat oven to 400 degrees.
Combine warm water, oil, yeast and sugar and mix well; let rest for 5-10 minutes or until frothy and bubbly
Mix in salt, egg and 2 cups of flour until combined. Add remaining flour ½ cup at a time (dough will be sticky). Spray your hands with cooking spray and shape the dough into 12 balls.
After shaped, place on lightly greased cookie sheet and let rest for 10 minutes. Bake for about 10 minutes or until tops are lightly golden.
