Cherokie Limb



Mozzarella Alfredo
Green Beans
Breadsticks
Ice Cream


Mozzarella Alfredo

2 Tbsp. olive oil
2 chicken breasts
3 garlic cloves
14 oz. chicken broth
1 cup heavy cream
12-16 oz. uncooked penne pasta
1 1/2 cups mozzarella
Parsley

Cook chicken with oil in a soup pot.  Add minced garlic.  Cook until you can smell the garlic.  Add chicken broth, cream and uncooked pasta.  Bring to a boil.  Reduce heat and cover for 15-20 minutes.  Add cheese; stir to melt.  Top with parsley.

Breadsticks

1 packet dry yeast
2 Tbsp. sugar
3 1/2 cups flour
2 Tbsp. butter
1 Tbsp. salt

Topping:
1/2 cup butter
2 tsp. garlic powder
1 tsp. salt


In a large bowl dissolve sugar and yeast in warm water and allow to sit for 10 minutes to activate yeast.  Add flour, salt, melted butter to yeast mixture.  Mix until fully combined.  Knead dough for a few minutes until dough is smooth in consistency.  Spray a cookie sheet with cooking spray.  Pull off pieces of dough and roll into strips.  Cover the dough with a light towel and let sit in a warm place for 45 minutes to 1 hour to allow to rest and rise.  Pre-heat oven to 400.  Once oven is preheated bake for 6-7 minutes.  While breadsticks are cooking, microwave topping ingredients until butter is melted.  When breadsticks are done, brush them with half the butter mixture. Continue to bake for 5-8 more minutes.  Immediately brush with remaining butter topping.
